- 1 cup coconut milk (full-fat) or 1 block silken tofu
- 2 tbsp maple syrup or agave nectar
- 1 tsp vanilla extract
- 1 tbsp unsweetened cocoa powder
- Pinch of salt
- 1/4 cup aquafaba or coconut cream (optional, for extra fluffiness)
Instructions
- Melt the Chocolate: Melt the dark chocolate using a double boiler or microwave in 20-second increments, stirring until smooth. Let cool slightly.
- Prepare the Base: If using silken tofu, blend until completely smooth. If using coconut milk, mix well before adding to the blender.
- Combine Ingredients: Add melted chocolate, maple syrup, vanilla extract, cocoa powder, and salt to the blender. Blend until smooth.
- Whip the Aquafaba (Optional): If using aquafaba, beat with a hand mixer until stiff peaks form. Gently fold into the chocolate mixture.
- Chill and Set: Transfer the mousse into serving dishes and refrigerate for at least 2 hours.
- Serve and Enjoy: Garnish with berries, shaved chocolate, or coconut whipped cream before serving.
