Ingredients
Scale
- 4 cups of all-purpose flour
- 1 packet (2 1/4 teaspoons) of active dry yeast
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 1/2 cups of warm water
- 1 small head of cabbage, shredded
- 1/2 cup of chopped onion
- 2 tablespoons of olive oil
- Optional: caraway seeds for added flavor
Instructions
- Prepare the Cabbage Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened. Add the shredded cabbage and cook until it wilts and becomes tender, about 10-15 minutes. Remove from heat and let it cool slightly.
- Mix the Dough: In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes foamy. Add the salt and the cooled cabbage mixture to the yeast mixture. Gradually add the flour, mixing until a soft dough forms.
- Knead and First Rise: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with a clean cloth and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.
- Shape and Bake: Preheat your oven to 375Β°F (190Β°C). Punch down the dough to release the air. Shape it into a loaf and place it in a greased loaf pan. Cover and let it rise for another 30 minutes. Before baking, you can sprinkle some caraway seeds on top for added flavor, if desired. Bake for 30-40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom. Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
- Use fresh ingredients for the best flavor and texture.
- Ensure the water used to activate the yeast is warm, not hot.
- Knead the dough thoroughly to develop the gluten.
- Allow sufficient rising time for a light and airy texture.
- Add shredded cheese, fresh herbs, or diced smoked meats for variations.
