Description
Bake the perfect, moist, and flavorful banana bread even at high altitude with this specifically adjusted recipe. Learn the secrets to counteracting the effects of thinner air pressure for a loaf that rises perfectly and stays delightfully moist.
Ingredients
Scale
- 3 very ripe bananas, mashed
- 1/3 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup milk or buttermilk
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk or buttermilk. Begin and end with the dry ingredients, mixing until just combined. Fold in walnuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For High Altitude: Reduce baking soda by 1/4 teaspoon, increase liquid by 1-2 tablespoons, and consider increasing oven temperature by 25°F (15°C).
- Use very ripe bananas for the best flavor and moisture.
- Don’t overmix the batter to avoid a tough bread.
- Cool completely before slicing to prevent crumbling.
