Instructions
- Prepare the Strawberries: Wash, hull, and blend fresh strawberries into a smooth puree. Set aside.
- Prepare the Cake Batter: Preheat oven to 350°F (175°C) and grease a cake pan. In a bowl, whisk together flour, baking powder, and baking soda. In another bowl, beat butter and sugar until creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and strawberry puree.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Bake the Cake: Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
- Make the Frosting: In a bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and lemon juice, continuing to whip until smooth and fluffy.
- Assemble the Cake: Spread frosting evenly over the cooled cake. Garnish with fresh strawberry slices or a drizzle of strawberry puree.
