Ingredients
Scale
- 2 cups corned beef (leftover or canned), diced or shredded
- 3 medium potatoes (russet or Yukon gold), peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter or oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp Worcestershire sauce
- Fresh parsley, chopped (optional)
- 4 eggs (optional, for serving)
Instructions
- Prepare the Potatoes – Peel and dice the potatoes into small, bite-sized cubes. Rinse under cold water to remove excess starch, then pat dry.
- Cook the Potatoes – Heat butter or oil in a large skillet over medium heat. Add potatoes and cook, stirring occasionally, until golden brown and crispy.
- Sauté the Aromatics – Add onion and garlic to the skillet. Sauté until soft and translucent.
- Add the Corned Beef – Stir in the shredded or diced corned beef.
- Season the Hash – Sprinkle with salt, black pepper, paprika, and Worcestershire sauce. Mix well.
- Crisp Up the Hash – Press the mixture into an even layer and let cook undisturbed for a few minutes. Flip and repeat until evenly browned.
- Optional Eggs – Make small wells in the hash and crack an egg into each. Cover the skillet and cook until eggs reach desired doneness.
- Garnish and Serve – Sprinkle with fresh parsley and serve hot.
Notes
- Cheesy Hash – Add shredded cheddar or mozzarella before serving.
- Spicy Hash – Include diced jalapeños or a pinch of cayenne.
- Vegetable Boost – Add bell peppers, mushrooms, or spinach.
- Sweet Potato Swap – Use sweet potatoes instead of regular ones.
- Low-Carb Option – Swap potatoes for cauliflower.
