Ingredients

Scale
  • 2 lbs beef chuck roast or brisket, cut into chunks
  • 4 dried guajillo chiles, stems removed and seeds discarded
  • 2 dried ancho chiles, stems removed and seeds discarded
  • 1 onion, chopped
  • 4 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • 2 cups beef broth
  • Salt and pepper to taste
  • Corn or flour tortillas for serving
  • Optional: chopped cilantro, diced onions, lime wedges for garnish

Instructions

  1. Soak dried guajillo and ancho chiles in hot water for 15 minutes until softened.
  2. Season beef chunks with salt, pepper, cumin, and oregano.
  3. Blend soaked chiles, chopped onion, garlic, and 1 cup beef broth until smooth to create the sauce.
  4. Place seasoned beef in the slow cooker, pour chili sauce over it, add bay leaf and remaining broth.
  5. Cover and cook on low for 8 hours until meat is tender and easily shredable.
  6. Remove beef and shred with forks. Dip tortillas into the flavorful broth for juiciness, then fill with beef.
  7. Optional: pan-fry the filled tacos until crispy and serve with garnishes like cilantro, diced onions, and lime wedges.

Notes

  • Use high-quality dried chiles for the best flavor.
  • Ensure chiles are thoroughly soaked for smooth blending.
  • Shred beef well for maximum juiciness in tacos.
  • Dipping tortillas in broth adds flavor and moisture.
  • Pan-frying the tacos gives a crispy texture but is optional.
