- 1 teaspoon salt
- 1 1/4 cups warm water (105-115°F)
- 2 cups shredded green cabbage
- 2 tablespoons olive oil
- Optional: 1 teaspoon caraway seeds for added flavor
Instructions
- Shred the green cabbage finely using a knife, mandoline, or food processor.
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Add flour, salt, shredded cabbage, and olive oil to the bowl. Mix until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Add more flour if too sticky.
- Place the dough in a lightly oiled bowl, turn to coat, and cover with plastic wrap. Let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Gently punch down the dough and shape it into a loaf. Place in a greased 9×5 inch baking pan.
- Cover the pan with plastic wrap and let rise again for 30-45 minutes, or until slightly above the pan’s edge.
- Preheat oven to 375°F (190°C).
- Bake for 30-35 minutes, or until golden brown and sounds hollow when tapped.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
