  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 1/4 cups warm water (105-115°F)
  • 2 cups shredded green cabbage
  • 2 tablespoons olive oil
  • Optional: 1 teaspoon caraway seeds for added flavor

Instructions

  1. Shred the green cabbage finely using a knife, mandoline, or food processor.
  2. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  3. Add flour, salt, shredded cabbage, and olive oil to the bowl. Mix until a shaggy dough forms.
  4. Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Add more flour if too sticky.
  5. Place the dough in a lightly oiled bowl, turn to coat, and cover with plastic wrap. Let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Gently punch down the dough and shape it into a loaf. Place in a greased 9×5 inch baking pan.
  7. Cover the pan with plastic wrap and let rise again for 30-45 minutes, or until slightly above the pan’s edge.
  8. Preheat oven to 375°F (190°C).
  9. Bake for 30-35 minutes, or until golden brown and sounds hollow when tapped.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
