- 1–2 large flour tortillas (enough to line a pie dish)
- 6 large eggs
- ½ cup milk or cream
- 1 cup shredded cheese (cheddar, mozzarella, or feta)
- 1 cup vegetables (spinach, bell peppers, onions, mushrooms, etc.)
- ½ cup cooked meat (bacon, sausage, or ham, optional)
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- 1 tbsp olive oil or butter
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a pie dish or oven-safe skillet.
- Prepare the tortilla crust by pressing a large tortilla into the dish. If needed, overlap two tortillas to fully line the dish.
- Pre-bake the tortilla shell for 5 minutes until slightly crisp to prevent sogginess.
- Whisk together eggs, milk, salt, pepper, and spices in a mixing bowl.
- Sauté vegetables in olive oil or butter until softened. If using cooked meat, add it to the pan to warm through.
- Assemble the quiche by spreading sautéed vegetables and meat evenly over the tortilla crust. Sprinkle cheese on top.
- Pour the egg mixture over the fillings, ensuring even distribution.
- Bake for 25-30 minutes, or until eggs are set and the top is lightly golden.
- Cool for 5-10 minutes before slicing and serving.
