Ingredients
Scale
- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1 cup buttermilk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/4 cup unsalted butter, melted and cooled
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Optional toppings: fresh berries, maple syrup, whipped cream
Instructions
- In a large mixing bowl, combine the sourdough discard, all-purpose flour, and buttermilk. Stir until smooth. Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature overnight, or for at least 8 hours.
- In the morning, preheat your waffle iron according to the manufacturer’s instructions.
- To the overnight mixture, add the granulated sugar, vanilla extract, egg, melted butter, baking soda, and salt. Stir until all ingredients are well incorporated.
- Lightly grease the preheated waffle iron with non-stick spray or melted butter.
- Pour the appropriate amount of batter onto the waffle iron (refer to your waffle iron’s guidelines) and close the lid. Cook until the waffles are golden brown and crisp, typically 3-5 minutes.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve the waffles warm with your choice of toppings such as fresh berries, maple syrup, or whipped cream.
Notes
- For a dairy-free version, substitute the buttermilk with almond milk mixed with 1 tablespoon of lemon juice, and use melted coconut oil instead of butter.
- These waffles can be frozen for up to 3 months. To reheat, place them in a toaster or oven until warmed through and crispy.
- Experiment with mix-ins like chocolate chips or chopped nuts for added flavor and texture.
