  • 1/4 cup pine nuts or walnuts
  • 1/3 cup olive oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Prepare the Pesto: In a food processor, combine sun-dried tomatoes, basil, garlic, Parmesan, and pine nuts. Pulse until roughly chopped.
  3. Add the Olive Oil: With the food processor running, slowly drizzle in olive oil until smooth.
  4. Season the Pesto: Add red pepper flakes, salt, black pepper, and lemon juice. Blend again.
  5. Combine with Pasta: Toss the drained pasta with the pesto, adding reserved pasta water as needed for consistency.
  6. Serve and Garnish: Plate the pasta and top with extra Parmesan, basil, and a drizzle of olive oil. Enjoy!
