Ingredients

  • 1 pre-made pie crust or you can make your own for added flavor
  • 2 cups of fresh spinach, washed and chopped
  • 1 cup of shredded cheese, either cheddar or Swiss will do
  • 3 large eggs, preferably organic
  • 1 cup of heavy cream for that rich and creamy texture
  • 1 teaspoon of salt to enhance flavor
  • 1/2 teaspoon of black pepper for a dash of spice
  • 1/4 teaspoon of nutmeg (optional, but it adds warmth)
  • 1 tablespoon of olive oil or butter for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C) and fit the pie crust into a tart pan, trimming excess dough.
  2. Blind bake the crust for about 10 minutes until golden, then set aside to cool.
  3. Sauté the chopped spinach in olive oil or butter for 2-3 minutes until wilted, then cool.
  4. In a bowl, mix sautéed spinach with shredded cheese.
  5. Whisk together the eggs, heavy cream, salt, pepper, and optional nutmeg, then fold in the spinach mixture.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 30-35 minutes until golden brown and set, then let cool for 10 minutes before slicing.
