Instructions
- Prepare the Spinach:
- Heat olive oil in a skillet over medium heat. Add garlic and onion, cooking until fragrant and softened.
- Stir in spinach, cooking until wilted. Remove from heat and allow to cool slightly.
- Preheat Oven and Grease Dish:
- Preheat oven to 375°F (190°C).
- Grease a baking dish with cooking spray or butter.
- Mix the Egg Mixture:
- In a large bowl, whisk together eggs, milk, salt, black pepper, and nutmeg (if using).
- Fold in cottage cheese and shredded cheese.
- Combine and Assemble:
