Instructions

  2. Bulk Fermentation: Place the dough in a lightly oiled bowl, cover, and let it ferment for 4-6 hours at room temperature. Perform stretch and folds every hour for the first 3 hours to build strength in the dough.
  3. Shaping the Bowls: Divide the dough into individual portions (about 600-700g each). Shape each portion into a tight round. Place them on a baking sheet lined with parchment paper, cover, and let them proof in the refrigerator overnight (8-12 hours).
  4. Baking the Bowls: Preheat your oven to 450°F (232°C) with a Dutch oven inside. Carefully place the shaped dough into the hot Dutch oven. Score the top of each loaf with a sharp knife or lame. Cover and bake for 20 minutes, then remove the lid and bake for another 20-25 minutes, or until golden brown and the internal temperature reaches 205-210°F (96-99°C).
  5. Creating the Bread Bowl: Once cooled, use a serrated knife to cut a circle into the top of each loaf, being careful not to cut all the way through. Remove the bread inside, creating a hollow bowl.
