For the Smash Burgers:

  • 1 lb ground beef (80/20 blend recommended)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp butter
  • 4 burger buns
  • 4 slices cheddar or American cheese
  • Pickles
  • Lettuce
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced

For the Baconnaise Sauce:

  • 4 slices bacon
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Instructions

Make the Baconnaise Sauce:

  1. Cook the bacon until crispy, then let it cool slightly before finely chopping.
  2. In a bowl, mix the chopped bacon with mayonnaise, Dijon mustard, lemon juice, smoked paprika, garlic powder, and black pepper.
  3. Stir well and refrigerate for at least 15 minutes to allow flavors to meld.

Prepare the Smash Burgers:

  1. Divide the ground beef into small portions (about 2 ounces each) and form them into loose balls.
  2. Heat a cast-iron skillet or griddle over high heat and add butter.
  3. Place a beef ball onto the hot skillet and immediately smash it flat with a spatula.
  4. Season with salt, black pepper, garlic powder, and onion powder.
  5. Cook for 1-2 minutes until the edges turn crispy and caramelized.
  6. Flip the burger, place a slice of cheese on top, and cook for another minute.

Assemble the Burgers:

  1. Lightly toast the burger buns in butter for added flavor.
  2. Spread a generous amount of baconnaise sauce on the bottom bun.
  3. Layer with lettuce, tomato slices, pickles, and red onion.
  4. Place the smash burger on top and finish with the top bun.
  5. Serve immediately with your favorite side dishes.
