For the Smash Burgers:

- 1 tbsp butter
- 4 burger buns
- 4 slices cheddar or American cheese
- Pickles
- Lettuce
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
For the Baconnaise Sauce:
- 4 slices bacon
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
Make the Baconnaise Sauce:
- Cook the bacon until crispy, then let it cool slightly before finely chopping.
- In a bowl, mix the chopped bacon with mayonnaise, Dijon mustard, lemon juice, smoked paprika, garlic powder, and black pepper.
- Stir well and refrigerate for at least 15 minutes to allow flavors to meld.
Prepare the Smash Burgers:
- Divide the ground beef into small portions (about 2 ounces each) and form them into loose balls.
- Heat a cast-iron skillet or griddle over high heat and add butter.
- Place a beef ball onto the hot skillet and immediately smash it flat with a spatula.
- Season with salt, black pepper, garlic powder, and onion powder.
- Cook for 1-2 minutes until the edges turn crispy and caramelized.
- Flip the burger, place a slice of cheese on top, and cook for another minute.
Assemble the Burgers:
- Lightly toast the burger buns in butter for added flavor.
- Spread a generous amount of baconnaise sauce on the bottom bun.
- Layer with lettuce, tomato slices, pickles, and red onion.
- Place the smash burger on top and finish with the top bun.
- Serve immediately with your favorite side dishes.
