Description

Enjoy the flavorful and hearty Slow Cooker Taco Casserole, a taco-inspired dish that’s easy to prepare and perfect for busy weeknights. Packed with seasoned meat, beans, corn, and cheese, this crockpot recipe offers a delicious and wholesome meal with minimal effort.

Ingredients

Scale
  • 1 lb ground beef or chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning (or homemade spice blend)
  • 1 cup rice or cauliflower rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, chopped onions, avocado slices
  • Fresh lime wedges for serving

Instructions

  1. In a skillet over medium heat, cook the ground beef or chicken until fully browned and crumbled. Drain excess fat and transfer to your crockpot.
  2. Layer the cooked meat at the bottom of the crockpot, then add black beans, corn, diced tomatoes with green chilies, and sprinkle with taco seasoning.
  3. Set your slow cooker to low and cook for 4-6 hours, or high for 2-3 hours, allowing the flavors to meld.
  4. About 30 minutes before serving, stir in rice or cauliflower rice, cover and continue cooking until tender.
  5. Sprinkle shredded cheese over the casserole in the last 15 minutes of cooking. Once melted, serve hot with optional toppings like sour cream, cilantro, and jalapeños.

Notes

  • You can customize with additional vegetables like bell peppers, spinach, or zucchini.
  • For a healthier option, use cauliflower rice or turkey instead of beef.
  • Leftovers can be stored in airtight containers for up to 3 days or frozen for longer storage.
