Ingredients
Scale
- 1 lb ground beef or chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning (or homemade spice blend)
- 1 cup rice or cauliflower rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, chopped cilantro, sliced jalapeños, chopped onions, avocado slices
- Fresh lime wedges for serving
Instructions
- In a skillet over medium heat, cook the ground beef or chicken until fully browned and crumbled. Drain excess fat and transfer to your crockpot.
- Layer the cooked meat at the bottom of the crockpot, then add black beans, corn, diced tomatoes with green chilies, and sprinkle with taco seasoning.
- Set your slow cooker to low and cook for 4-6 hours, or high for 2-3 hours, allowing the flavors to meld.
- About 30 minutes before serving, stir in rice or cauliflower rice, cover and continue cooking until tender.
- Sprinkle shredded cheese over the casserole in the last 15 minutes of cooking. Once melted, serve hot with optional toppings like sour cream, cilantro, and jalapeños.
Notes
- You can customize with additional vegetables like bell peppers, spinach, or zucchini.
- For a healthier option, use cauliflower rice or turkey instead of beef.
- Leftovers can be stored in airtight containers for up to 3 days or frozen for longer storage.
