Ingredients
- Chicken thighs or breasts
- Pineapple chunks
- Red bell pepper
- Green bell pepper
- Yellow bell pepper
- Red onion
- Soy sauce
- Honey
- Minced garlic
- Ginger
- Olive oil
- Red pepper flakes (optional)
- Salt
- Black pepper
- Scallions (for garnish)
- Sesame seeds (for garnish)
Instructions
- Preheat the Oven – Set your oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly grease it with cooking spray.
- Prepare the Marinade – In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, olive oil, and a pinch of red pepper flakes for heat.
- Marinate the Chicken – Place chicken pieces in a bowl or zip-top bag, pour the marinade over them, and let them sit for at least 15 minutes (or up to 2 hours for deeper flavor).
- Chop the Vegetables – Cut the bell peppers, red onion, and pineapple into bite-sized chunks.
- Arrange on the Sheet Pan – Spread the marinated chicken on the sheet pan and arrange the vegetables and pineapple evenly around the chicken.
- Roast in the Oven – Bake for 25-30 minutes, flipping halfway through, until the chicken is fully cooked and the vegetables are tender.
- Broil for Extra Caramelization – For a deeper caramelized flavor, broil the dish for an additional 2-3 minutes at the end.
- Garnish and Serve – Sprinkle with chopped scallions and sesame seeds before serving. Enjoy with steamed rice or cauliflower rice!
Notes
- Swap the Protein – Use shrimp, salmon, or tofu instead of chicken for a different twist.
- Adjust the Sweetness – Reduce honey for a less sweet version or add a splash of pineapple juice for extra tropical notes.
- Make it Spicier – Add more red pepper flakes or a drizzle of sriracha for a spicy kick.
- Try Different Veggies – Use zucchini, carrots, or snap peas for extra crunch and variety.
