Sheet Pan Hawaiian Chicken

  • Total Time: 45 minutes
  • Yield: 4 servings

Description

Sheet Pan Hawaiian Chicken is a quick and easy one-pan meal featuring juicy chicken, sweet pineapple, and vibrant bell peppers roasted to perfection. A perfect balance of sweet and savory flavors with minimal cleanup.

Ingredients

  • Chicken thighs or breasts
  • Pineapple chunks
  • Red bell pepper
  • Green bell pepper
  • Yellow bell pepper
  • Red onion
  • Soy sauce
  • Honey
  • Minced garlic
  • Ginger
  • Olive oil
  • Red pepper flakes (optional)
  • Salt
  • Black pepper
  • Scallions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the Oven – Set your oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Marinade – In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, olive oil, and a pinch of red pepper flakes for heat.
  3. Marinate the Chicken – Place chicken pieces in a bowl or zip-top bag, pour the marinade over them, and let them sit for at least 15 minutes (or up to 2 hours for deeper flavor).
  4. Chop the Vegetables – Cut the bell peppers, red onion, and pineapple into bite-sized chunks.
  5. Arrange on the Sheet Pan – Spread the marinated chicken on the sheet pan and arrange the vegetables and pineapple evenly around the chicken.
  6. Roast in the Oven – Bake for 25-30 minutes, flipping halfway through, until the chicken is fully cooked and the vegetables are tender.
  7. Broil for Extra Caramelization – For a deeper caramelized flavor, broil the dish for an additional 2-3 minutes at the end.
  8. Garnish and Serve – Sprinkle with chopped scallions and sesame seeds before serving. Enjoy with steamed rice or cauliflower rice!

Notes

  • Swap the Protein – Use shrimp, salmon, or tofu instead of chicken for a different twist.
  • Adjust the Sweetness – Reduce honey for a less sweet version or add a splash of pineapple juice for extra tropical notes.
  • Make it Spicier – Add more red pepper flakes or a drizzle of sriracha for a spicy kick.
  • Try Different Veggies – Use zucchini, carrots, or snap peas for extra crunch and variety.
