  • Total Time: 40 minutes
  • Yield: 4-6 servings 1x

Description

Enjoy crispy, cheesy, and flavorful Sheet Pan Baked Chicken Chimichangas without the excess oil of deep frying. This easy, family-friendly recipe is perfect for weeknight dinners with minimal cleanup.

Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup salsa
  • 1/4 cup diced green chilies
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 large flour tortillas
  • 2 tbsp olive oil or melted butter
  • Optional toppings: sour cream, guacamole, chopped cilantro, diced tomatoes, shredded lettuce

Instructions

  1. Preheat Oven – Set oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease with cooking spray.
  2. Prepare the Filling – In a large bowl, combine shredded chicken, cream cheese, shredded cheese, salsa, green chilies, cumin, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Assemble the Chimichangas – Lay out flour tortillas and spoon a portion of the filling onto the center of each tortilla.
  4. Roll and Seal – Fold in the sides of each tortilla, then roll it up tightly like a burrito. Place seam-side down on the baking sheet.
  5. Brush with Oil or Butter – Lightly brush each chimichanga with olive oil or melted butter for a golden-brown finish.
  6. Bake – Place in the oven and bake for 20-25 minutes, flipping halfway through for even crispiness.
  7. Serve – Let cool slightly and serve with your favorite toppings.

Notes

  • Spicy Kick – Add diced jalapeños or hot sauce to the filling.
  • Vegetarian Option – Replace chicken with black beans, corn, and sautéed bell peppers.
  • Different Proteins – Use shredded beef, pulled pork, or seasoned tofu instead of chicken.
  • Low-Carb Version – Swap flour tortillas for low-carb tortillas or lettuce wraps.
  • Extra Crunch – Sprinkle grated cheese on top before baking for a crispy, cheesy layer.
