Instructions

  1. Preheat your oven to 375°F (190°C). Wash and peel the potatoes, then slice them into thin, even rounds (about 1/8-inch thick).
  2. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to create a roux. Gradually whisk in the milk and heavy cream, stirring constantly to avoid lumps. Add the garlic powder, onion powder, salt, and black pepper. Cook until the sauce thickens (about 5 minutes). Remove from heat and stir in 1 cup of cheddar cheese until melted.
  3. Grease a 9×13-inch baking dish. Arrange half of the potato slices in an even layer at the bottom. Pour half of the creamy sauce over the potatoes, spreading it evenly. Repeat with the remaining potatoes and sauce. Sprinkle the remaining cheddar cheese and Parmesan on top.
  4. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and the potatoes are fork-tender. Let it rest for 10 minutes before serving. Garnish with fresh parsley.
