Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil (divided)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 bell peppers, diced
  • 1 medium zucchini, diced
  • 2 cups spinach or kale, chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/4 cup chicken or vegetable broth

Instructions

  1. Prepare Ingredients: Dice sweet potatoes into uniform cubes, finely chop onion, mince garlic, and dice bell peppers and zucchini.
  2. Cook Sweet Potatoes: Heat 1 tbsp olive oil in a large skillet over medium heat. Add sweet potatoes and sauté for 5-7 minutes until softened. Remove and set aside.
  3. Cook Turkey: Add ground turkey to the same skillet. Cook over medium heat, breaking it up, until browned and cooked through. Season with salt and pepper, then remove and set aside with sweet potatoes.
  4. Sauté Vegetables: Add remaining olive oil to the skillet. Sauté onion and garlic for 2-3 minutes until fragrant. Add bell peppers and zucchini, cooking for 5-7 minutes until tender.
  5. Combine and Season: Return turkey and sweet potatoes to the skillet. Add paprika, cumin, chili powder, and more salt and pepper to taste. Stir to combine.
  6. Add Greens and Broth: Stir in spinach or kale and pour in broth. Cook for 3-5 minutes until greens are wilted and flavors meld.
  7. Serve: Taste and adjust seasonings as needed. Serve hot on its own or with rice, quinoa, or crusty bread.
