- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cups spinach or kale, chopped
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- ½ cup grated Parmesan cheese, plus extra for garnish
Instructions
- Prepare Ingredients: Dice the onion, mince the garlic, and chop the carrots and celery.
- Cook the Sausage: Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it up as it browns. Drain excess fat if needed.
- Sauté the Vegetables: Add onion, garlic, carrots, and celery to the pot. Sauté until softened and fragrant.
- Add Tomatoes & Seasoning: Stir in diced tomatoes, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Cook for a few minutes.
- Pour in Broth & Beans: Add chicken broth and cannellini beans. Bring to a gentle simmer and cook for 20 minutes.
- Add Greens: Stir in spinach or kale, cooking until wilted.
- Finish with Parmesan: Stir in grated Parmesan until well incorporated.
- Serve: Ladle into bowls, garnish with extra Parmesan if desired, and enjoy!
