Ingredients

  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 1 tsp dried oregano
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

. Preheat the Oven

  • Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Prepare the Eggplant

  • Wash and cut the eggplant into slices, cubes, or wedges, depending on your preference.

3. Season the Eggplant

  • In a bowl, toss the eggplant pieces with olive oil, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using).

4. Arrange on a Baking Sheet

  • Spread the seasoned eggplant in a single layer on the prepared baking sheet to ensure even roasting.

5. Roast the Eggplant

  • Bake for 25-30 minutes, flipping halfway through, until the eggplant is tender and slightly caramelized.

6. Add Fresh Herbs & Lemon Juice

  • Remove from the oven and sprinkle with fresh parsley, basil, and a squeeze of lemon juice.

7. Serve Warm
