- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
. Preheat the Oven
- Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Prepare the Eggplant
- Wash and cut the eggplant into slices, cubes, or wedges, depending on your preference.
3. Season the Eggplant
- In a bowl, toss the eggplant pieces with olive oil, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using).
4. Arrange on a Baking Sheet
- Spread the seasoned eggplant in a single layer on the prepared baking sheet to ensure even roasting.
5. Roast the Eggplant
- Bake for 25-30 minutes, flipping halfway through, until the eggplant is tender and slightly caramelized.
6. Add Fresh Herbs & Lemon Juice
- Remove from the oven and sprinkle with fresh parsley, basil, and a squeeze of lemon juice.
