Instructions
- Prepare the Carrots: Preheat oven to 400°F (200°C). Trim and halve large carrots lengthwise.
- Season and Roast: Arrange carrots on a parchment-lined baking sheet. Drizzle with olive oil, season with salt, pepper, and cumin, then toss to coat. Spread evenly.
- Roast Until Tender: Bake for 25-30 minutes, flipping halfway, until carrots are caramelized and tender.
- Make the Tahini Sauce: In a bowl, whisk tahini, lemon juice, garlic, honey (or maple syrup), salt, and water until smooth.
- Assemble the Dish: Place roasted carrots on a serving plate and drizzle with tahini sauce.
- Garnish and Serve: Sprinkle with fresh mint and optional toasted sesame seeds. Serve warm.
