- 6–8 garlic cloves, thinly sliced
- 3–4 sprigs fresh rosemary, plus extra for garnish
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp dried thyme (optional)
- 1 cup dry white wine or chicken broth (for deglazing)
Instructions
- Bring the leg of lamb to room temperature for even cooking. Pat dry with paper towels.
- Make small incisions all over the lamb and insert garlic slices and rosemary sprigs.
- Rub the lamb with olive oil, then season with salt, pepper, and thyme. Let rest for 15-20 minutes.
- Preheat oven to 375°F (190°C). Roast for 20 minutes per pound for medium-rare (135°F internal temperature), basting occasionally.
- Remove from oven, tent with foil, and let rest for 15-20 minutes before carving.
