- 2/3 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup almond flour (or finely ground almonds)
- 1/4 teaspoon salt
- 1/2 cup raspberry jam (or your favorite jam)
- 1/4 cup sliced almonds for garnish (optional)
Instructions
- In a large bowl, beat softened butter and sugar until light and fluffy (2-3 minutes). Add vanilla and almond extracts.
- Whisk together all-purpose flour, almond flour, and salt in separate bowl. Gradually add to butter mixture until just combined.
- Preheat oven to 350°F (175°C). Roll dough into 1-inch balls and place on parchment-lined baking sheet. Make thumbprint indentations.
- Fill each indentation with 1/2 tsp raspberry jam. Optionally sprinkle with sliced almonds.
- Bake for 12-15 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes before transferring to wire rack.
