- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt (for garlic butter)
- Optional: grated Parmesan cheese for topping
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the sourdough discard, all-purpose flour, baking powder, salt, and olive oil. Mix until a soft dough forms.
- Transfer the dough to a lightly floured surface and knead gently for about 1-2 minutes until smooth.
- Divide the dough into 8 equal portions. Roll each portion into a rope approximately 6 inches long and tie into a knot.
- Place the knots onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 15-18 minutes, or until the knots are golden brown.
- While the knots are baking, prepare the garlic butter by combining the melted butter, minced garlic, chopped parsley, and 1/4 teaspoon salt in a small bowl.
- Once the knots are done baking, remove them from the oven and immediately brush them with the garlic butter.
- Optional: Sprinkle grated Parmesan cheese over the warm knots for added flavor.
- Serve warm and enjoy!

- For a dairy-free version, substitute the unsalted butter with additional olive oil.
