  • 1/4 cup sliced jalapeños (optional)

Instructions

  1. Prepare the Ingredients
    • If using leftover pulled pork, reheat it gently in a skillet or microwave until warm.
    • Mix with BBQ sauce if desired for extra flavor.
  2. Heat the Skillet
    • Place a large skillet or griddle over medium heat and add butter or oil to prevent sticking.
  3. Assemble the Quesadilla
    • Lay a tortilla flat on a clean surface.
    • Sprinkle shredded cheese over one half of the tortilla.
    • Add pulled pork on top of the cheese, along with onions, jalapeños, and cilantro if using.
  4. Fold and Cook
    • Fold the tortilla in half, pressing gently to seal.
    • Transfer to the skillet and cook for 2-3 minutes until golden brown.
  5. Flip and Cook the Other Side
    • Flip the quesadilla and cook for another 2-3 minutes, until the cheese is fully melted and the tortilla is crispy.
  6. Serve
    • Remove from the skillet, let it rest for a minute, then slice into wedges.
    • Serve with sour cream, guacamole, or extra BBQ sauce for dipping.
