  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated or minced)
  • 1/2 onion (diced)
  • 1/2 cup bell peppers (optional, diced)
  • Salt and pepper to taste
  • 1 tablespoon lime juice (optional, for added zest)
  • Fresh cilantro (for garnish)

Instructions

  • Cook the Rice:

    • Cook rice according to the package instructions (white or brown rice). Once done, set it aside.
  • Prepare the Chicken:

    • Cut chicken into bite-sized pieces and season with salt and pepper. Heat olive oil or sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook for 5-7 minutes, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  • Sauté the Vegetables:

    • In the same skillet, add a bit more oil if necessary. Add diced onion, garlic, and grated ginger, sautéing for 2-3 minutes until the onion softens and garlic is fragrant. If using bell peppers, add them now and cook for an additional 2 minutes.
  • Add the Pineapple and Sauce:

    • Add pineapple chunks to the skillet and stir. Pour in soy sauce and stir to combine. For a tangy touch, add lime juice.
  • Combine the Chicken and Rice:

    • Return the cooked chicken to the skillet and stir to mix with the pineapple and vegetables. Allow the flavors to meld for another 2-3 minutes.
  • Add the Rice:

    • Add the cooked rice to the skillet, stirring well to combine. If the mixture is dry, add a splash of water or extra soy sauce.
  • Serve:

    • Once everything is heated through and well-mixed, remove from heat. Garnish with fresh cilantro and serve immediately. Lime wedges can be served for extra zest.
