Description

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, avocado, sour cream, and lime wedges for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken and cook until lightly browned, about 5 minutes. Stir in diced onion and minced garlic, cooking for another 2 minutes until fragrant.
  2. Stir in black beans and corn kernels, mixing well to combine. Cook for another 3 minutes until the vegetables are heated through.
  3. Sprinkle the taco seasoning over the mixture, stirring to coat everything evenly. If needed, add ¼ cup of water to help the seasoning blend smoothly.
  4. Reduce heat to low and sprinkle shredded cheese over the top. Cover the skillet for 2 minutes to let the cheese melt. Serve hot over cooked rice, garnished with fresh cilantro, avocado, sour cream, and lime wedges.
