  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup vegetable oil

  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat together the granulated sugar, brown sugar, and eggs until light and fluffy.
  4. Gradually mix in the vegetable oil and vanilla extract until well combined.
  5. Stir the grated turnip into the wet ingredients.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
