Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, beat together the granulated sugar, brown sugar, and eggs until light and fluffy.
- Gradually mix in the vegetable oil and vanilla extract until well combined.
- Stir the grated turnip into the wet ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
