  • 1 cup cherry tomatoes, halved

  • 3 garlic cloves, minced
  • 1/2 red onion, thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped (optional)
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • . Preheat Oven

    • Set the oven to 400°F (200°C) and lightly grease a baking dish with olive oil.

    2. Prepare Vegetables

    • Slice the cherry tomatoes, red onion, and mince the garlic.

    3. Arrange Fish & Toppings

    • Place the fish fillets in the baking dish.
    • Scatter tomatoes, olives, red onion, and garlic over the top.

    4. Season & Drizzle

    • Drizzle olive oil and fresh lemon juice over the fish.
    • Sprinkle with oregano, paprika, salt, black pepper, and red pepper flakes (if using).

    5. Bake

    • Cover with foil and bake for 12-15 minutes, or until the fish flakes easily with a fork.

    6. Garnish & Serve

    • Remove from the oven and garnish with fresh parsley and basil.
    • Serve warm with rice, couscous, or crusty bread.
