- 2 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped (optional)
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper

- Set the oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
2. Prepare Vegetables
- Slice the cherry tomatoes, red onion, and mince the garlic.
3. Arrange Fish & Toppings
- Place the fish fillets in the baking dish.
- Scatter tomatoes, olives, red onion, and garlic over the top.
4. Season & Drizzle
- Drizzle olive oil and fresh lemon juice over the fish.
- Sprinkle with oregano, paprika, salt, black pepper, and red pepper flakes (if using).
5. Bake
- Cover with foil and bake for 12-15 minutes, or until the fish flakes easily with a fork.
6. Garnish & Serve
- Remove from the oven and garnish with fresh parsley and basil.
- Serve warm with rice, couscous, or crusty bread.
