Ingredients

Scale
  • 4 medium zucchinis, sliced
  • 1 pound (450g) sausage (your choice: pork, turkey, chicken)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by slicing the zucchinis into thin rounds, dicing the onion, and mincing the garlic.
  2. Heat a large skillet over medium heat and add olive oil. Cook the sausage until browned and cooked through, breaking it apart with a spoon. Remove and set aside.
  3. In the same skillet, sauté the diced onion and garlic until fragrant and translucent, about 2-3 minutes. Add Italian seasoning, salt, and pepper.
  4. Preheat your oven to 375°F (190°C). In a baking dish, layer the zucchini slices, cooked sausage, sautéed vegetables, and shredded cheese. Repeat the layers if desired, finishing with cheese on top.
  5. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.

Notes

  • Use a mix of cheeses for richer flavor.
  • Experiment with different sausages, such as spicy Italian or mild turkey.
  • Make ahead and refrigerate for up to 24 hours before baking for convenience.
