Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/2 cup olive oil
- 1/2 cup ranch dressing
- 3 tablespoons Worcestershire sauce
- 1 teaspoon distilled white vinegar
- 1 teaspoon lemon juice
- 1 tablespoon minced garlic
- 1/2 teaspoon black pepper
- 1 cup shredded provolone cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup ranch dressing
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 2 tablespoons unsalted butter, melted
Instructions
- In a bowl, whisk together olive oil, ranch dressing, Worcestershire sauce, vinegar, lemon juice, minced garlic, and black pepper to create the marinade.
- Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 2 hours, up to overnight.
- Preheat a grill or grill pan over medium-high heat.
- Remove chicken from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Transfer to an oven-safe baking dish.
- In a microwave-safe bowl, combine provolone cheese, Parmesan cheese, and ranch dressing. Microwave in 15-second intervals, stirring in between, until melted and smooth.
- Spread the cheese mixture evenly over each grilled chicken breast.
- In a separate bowl, mix panko breadcrumbs, garlic powder, and melted butter until the breadcrumbs are evenly coated.
- Sprinkle the breadcrumb mixture over the cheese-covered chicken breasts.
- Preheat the oven broiler to low. Place the baking dish under the broiler for 3-4 minutes, or until the breadcrumbs are golden brown and crispy. Watch closely to prevent burning.
- Remove from the oven and serve immediately.
Notes
- For a quicker marinade, you can substitute the homemade marinade with 1 cup of Italian dressing.
- To make this recipe keto-friendly, replace panko breadcrumbs with crushed pork rinds.
- If you don’t have provolone cheese, Swiss, mozzarella, or Muenster cheese can be used as substitutes.
- Ensure the chicken breasts are of uniform thickness for even cooking.
- Always monitor the chicken closely while broiling to prevent over-browning or burning.
