Ingredients

Scale
  • 4 boneless, skinless chicken breasts, pounded to ½ inch thickness
  • Salt and pepper, to taste
  • 3 tablespoons vegetable oil
  • For the Marinade:
  • ⅓ cup olive oil
  • ⅓ cup ranch dressing
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon distilled white vinegar
  • 1 teaspoon lemon juice
  • 1 tablespoon minced garlic
  • ½ teaspoon black pepper
  • For the Parmesan Crust:
  • ½ cup Parmesan cheese, chopped into bits
  • ½ cup Provolone cheese, chopped into bits
  • 6 tablespoons buttermilk ranch dressing
  • 4 tablespoons melted butter
  • ¾ cup panko breadcrumbs
  • 2 teaspoons garlic powder

Instructions

  1. In a bowl, whisk together all marinade ingredients until well combined.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, or up to overnight.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Remove chicken from the marinade, allowing excess to drip off, and season both sides with salt and pepper.
  5. Sear the chicken in the skillet for 4-5 minutes per side, until golden brown and cooked through. Transfer to a baking sheet and tent with foil to keep warm.
  6. Preheat the oven to a low broil (450°F).
  7. In a microwave-safe bowl, combine Parmesan cheese, Provolone cheese, and ranch dressing. Microwave in 15-second intervals, stirring between, until melted and combined.
  8. Spread the cheese mixture evenly over each chicken breast.
  9. In another bowl, mix melted butter, panko breadcrumbs, and garlic powder until the breadcrumbs are well coated.
  10. Sprinkle the breadcrumb mixture over the cheese layer on each chicken breast.
  11. Place the baking sheet under the broiler for 3-4 minutes, or until the breadcrumbs are golden brown and crispy. Watch closely to prevent burning.
  12. Remove from oven and serve immediately.

Notes

  • For a quicker marinade, you can substitute the homemade marinade with 1 cup of Italian salad dressing.
  • Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
  • Serve with sides like mashed potatoes and roasted vegetables for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
