Instructions
- Prepare the Chicken: Pound the chicken breasts to an even thickness. Season both sides with salt, black pepper, and garlic powder.
- Set Up Breading Stations: In three separate bowls, place flour in one, beaten eggs in another, and a mixture of Italian breadcrumbs and grated Parmesan cheese in the third.
- Bread the Chicken: Dredge each chicken breast in flour, then dip into the egg wash, and finally coat with the breadcrumb mixture. Press lightly to ensure the breadcrumbs adhere well.
- Cook the Chicken: Heat a combination of olive oil and butter in a large skillet over medium heat. Cook each breaded chicken breast for about 3-4 minutes per side until golden brown. Remove and set aside.
- Prepare the Marinara Sauce: Warm the marinara sauce in a saucepan over low heat.
- Assemble the Dish: Preheat the oven to 375°F (190°C). Place the cooked chicken breasts on a baking sheet or in an oven-safe dish. Spoon marinara sauce over each piece and top with mozzarella cheese.
