Instructions
- Preheat oven to 350Β°F (175Β°C). In a mixing bowl, combine flour, softened butter, and powdered sugar until crumbly.
- Line an 8Γ8 inch baking dish with parchment paper. Press the crust mixture into the bottom and bake for 15 minutes until lightly golden brown.
- In a separate bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, shredded coconut, baking powder, and salt until smooth.
- Pour the lemon filling over the crust and spread evenly. Bake for an additional 20-25 minutes until filling is set and edges are golden.
