Instructions
- Prepare the Vegetables – Shred the cabbage, slice the carrots, onions, bell peppers, and scallions, and dice the tomato. Mince the garlic and finely chop the scotch bonnet pepper.
- Heat the Oil – In a large skillet or pan, heat vegetable oil over medium heat.
- Sauté the Aromatics – Add the onion, garlic, scallion, and scotch bonnet pepper to the pan. Sauté for 2-3 minutes until fragrant.
- Add the Vegetables – Stir in the sliced carrots, bell pepper, and tomato. Cook for another 2 minutes.
- Incorporate the Cabbage – Add the shredded cabbage, mixing well to combine all ingredients.
- Season the Dish – Sprinkle in salt, black pepper, and allspice, tossing to ensure even seasoning.
- Steam the Cabbage – Pour in water or vegetable broth. Cover the pan and let it steam for 10-15 minutes, stirring occasionally, until the cabbage is tender but not mushy.
- Finish with Thyme – Add fresh thyme sprigs, allowing them to infuse the dish.
- Serve and Enjoy – Remove from heat, discard the thyme sprigs, and serve warm.
