  • 1 bell pepper, sliced
  • 1 medium tomato, diced
  • 2 tbsp vegetable oil (or coconut oil)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp allspice
  • ¼ cup water or vegetable broth

Instructions

  • Prepare the Vegetables – Shred the cabbage, slice the carrots, onions, bell peppers, and scallions, and dice the tomato. Mince the garlic and finely chop the scotch bonnet pepper.
  • Heat the Oil – In a large skillet or pan, heat vegetable oil over medium heat.
  • Sauté the Aromatics – Add the onion, garlic, scallion, and scotch bonnet pepper to the pan. Sauté for 2-3 minutes until fragrant.
  • Add the Vegetables – Stir in the sliced carrots, bell pepper, and tomato. Cook for another 2 minutes.
  • Incorporate the Cabbage – Add the shredded cabbage, mixing well to combine all ingredients.
  • Season the Dish – Sprinkle in salt, black pepper, and allspice, tossing to ensure even seasoning.
  • Steam the Cabbage – Pour in water or vegetable broth. Cover the pan and let it steam for 10-15 minutes, stirring occasionally, until the cabbage is tender but not mushy.
  • Finish with Thyme – Add fresh thyme sprigs, allowing them to infuse the dish.
  • Serve and Enjoy – Remove from heat, discard the thyme sprigs, and serve warm.
