Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 (15-ounce) can Libby’s pumpkin puree
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9Γ—5 inch loaf pan.
  2. In a large mixing bowl, combine the Libby’s pumpkin puree, sugar, oil, and eggs. Mix well until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Fold in the walnuts and chocolate chips, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the pumpkin bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve. Enjoy!

Notes

  • For best results, use room temperature ingredients for a better emulsion.
  • Don’t overmix the batter to avoid a tough bread. Mix until just combined.
  • To keep the bread moist, store it in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
  • Add dried cranberries or raisins for a different twist.
  • Try a streusel topping for added texture and sweetness.
