- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 (15-ounce) can Libbyβs pumpkin puree
- 1/2 cup chopped walnuts (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a large mixing bowl, combine the Libbyβs pumpkin puree, sugar, oil, and eggs. Mix well until smooth.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the walnuts and chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the pumpkin bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
