- 2 chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- For the dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Begin by cooking the pasta in boiling salted water according to package instructions until al dente. Drain and rinse with cold water to stop cooking and cool the pasta.
- Season chicken breasts with salt, pepper, and oregano. Grill on a hot grill or skillet until cooked through, then rest for a few minutes before slicing into strips.
- Halve cherry tomatoes, dice cucumber, and thinly slice red onion. Mix all in a large bowl with sliced Kalamata olives and chopped parsley.
- Combine cooled pasta, sliced chicken, and vegetables in a large bowl. Add crumbled feta cheese and toss gently.
- Whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the salad and toss to coat evenly.
