  • 2 chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • For the dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Begin by cooking the pasta in boiling salted water according to package instructions until al dente. Drain and rinse with cold water to stop cooking and cool the pasta.
  2. Season chicken breasts with salt, pepper, and oregano. Grill on a hot grill or skillet until cooked through, then rest for a few minutes before slicing into strips.
  3. Halve cherry tomatoes, dice cucumber, and thinly slice red onion. Mix all in a large bowl with sliced Kalamata olives and chopped parsley.
  4. Combine cooled pasta, sliced chicken, and vegetables in a large bowl. Add crumbled feta cheese and toss gently.
