Packed with flavorful seasoned ground beef, melted cheese, and classic enchilada sauce, this one-pan family favorite is both nutritious and delicious. Quick to prepare and simple to clean up, these cheesy enchiladas are a guaranteed hit for everyone at the dinner table.

Ingredients

Scale
  • 1 lb (450g) lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (optional)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Add the diced onion and minced garlic, cooking until translucent. Stir in cumin, chili powder, salt, and pepper, then mix well.
  2. Spread a thin layer of enchilada sauce on each tortilla. Spoon the beef mixture onto each tortilla, sprinkle with shredded cheeses, then roll up tightly and place seam-side down in a greased baking dish.
  3. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with extra cheese if desired. Cover with foil and bake at 375°F (190°C) for 20-25 minutes until bubbly. Remove foil in the last 5 minutes for a crispy top.
  4. Allow to cool slightly, garnish with cilantro, and serve hot. Pair with rice, beans, or a fresh salad for a complete meal.

Notes

  • Use lean ground beef or turkey for a healthier option.
  • For extra flavor, add diced bell peppers or spinach to the filling.
  • Wrap in foil and freeze for up to 2 months for make-ahead convenience.
  • Top with sliced jalapeños or sour cream for added zest.
