- ⅓ cup of honey or maple syrup
- ¾ cup of Greek yogurt or unsweetened applesauce
- 2 large eggs
- 1 teaspoon of vanilla extract
- ¼ cup of coconut sugar or brown sugar
- 1 tablespoon of ground cinnamon
- 1 tablespoon of melted coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. whisk together dry ingredients: whole wheat flour, baking powder, baking soda, and salt.
- In a separate bowl, mix honey (or maple syrup), Greek yogurt (or applesauce), eggs, and vanilla until smooth. Gradually combine with dry ingredients until just combined.
- Prepare the cinnamon swirl by mixing coconut sugar, cinnamon, and melted coconut oil in a small bowl.
- Pour ⅓ of the batter into each muffin liner. Add a layer of cinnamon sugar mixture, then top with more batter, filling each about 2/3 full. Swirl gently with a toothpick or skewer.
- Bake for 18-20 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
