  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda

  • ⅓ cup of honey or maple syrup
  • ¾ cup of Greek yogurt or unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • ¼ cup of coconut sugar or brown sugar
  • 1 tablespoon of ground cinnamon
  • 1 tablespoon of melted coconut oil


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. whisk together dry ingredients: whole wheat flour, baking powder, baking soda, and salt.
  2. In a separate bowl, mix honey (or maple syrup), Greek yogurt (or applesauce), eggs, and vanilla until smooth. Gradually combine with dry ingredients until just combined.
  3. Prepare the cinnamon swirl by mixing coconut sugar, cinnamon, and melted coconut oil in a small bowl.
  4. Pour ⅓ of the batter into each muffin liner. Add a layer of cinnamon sugar mixture, then top with more batter, filling each about 2/3 full. Swirl gently with a toothpick or skewer.
  5. Bake for 18-20 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
