Ingredients
Scale
- 1 lb ground turkey
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup julienned carrots
- 1/2 cup snow peas
- 2 green onions, chopped
- 1 tbsp sesame seeds
- Cooked rice or noodles (optional, for serving)
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, sesame oil, rice vinegar, cornstarch, and water. Set aside.
- Cook the Turkey: Heat a large skillet or wok over medium-high heat. Add a drizzle of sesame oil and cook the ground turkey, breaking it apart with a spatula until browned and fully cooked.
- Sauté the Vegetables: Add bell peppers, broccoli, carrots, and snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
- Combine and Cook: Pour the prepared teriyaki sauce over the turkey and vegetables, stirring well to coat. Cook for another 2-3 minutes until the sauce thickens and evenly coats the ingredients.
- Garnish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve over cooked rice or noodles if desired.
Notes
- Protein Swap: Use ground chicken, beef, or tofu instead.
- Low-Carb Option: Serve over cauliflower rice or in lettuce wraps.
- Spicy Kick: Add red pepper flakes or sriracha.
- Different Vegetables: Try zucchini, mushrooms, snap peas, or baby corn.
- Gluten-Free: Use tamari or coconut aminos instead of soy sauce.
