Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Add the diced onions and minced garlic, cooking until fragrant (about 2 minutes). Drain any excess fat if needed.
- While the beef is cooking, peel and dice the potatoes into ½-inch cubes. Rinse them under cold water to remove excess starch, then pat dry with a paper towel.
- Add the remaining tablespoon of olive oil to the skillet with the beef. Stir in the diced potatoes, paprika, thyme, salt, and black pepper. Mix well to coat everything evenly with the spices.
- Pour in the beef broth, cover the skillet, and reduce heat to medium-low. Let it simmer for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender. If needed, add a splash more broth or water to prevent sticking.
