- 1 lb small potatoes (baby or new potatoes)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ cup shredded cheddar cheese
- ¼ cup Parmesan cheese
- 2 tbsp fresh chives, chopped
- Sour cream (optional, for serving)
Instructions
- Preheat the Grill: Heat to medium-high (375-400°F). Preheat for at least 10 minutes if using a gas grill.
- Prepare the Potatoes: Wash, dry, and slice potatoes into halves or thick rounds for even cooking.
- Season the Potatoes: Toss potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
- Grill the Potatoes: Place cut-side down on the grill. Cover and cook for 10-12 minutes. Flip and grill another 8-10 minutes until golden brown and tender.
- Add the Cheese: Sprinkle cheddar and Parmesan over the potatoes. Close the lid for 1-2 minutes until melted.
- Garnish & Serve: Remove from the grill, sprinkle with fresh chives, and serve hot with sour cream if desired.
