Ingredients
- Boneless rib steaks
- Olive oil
- Kosher salt
- Freshly ground black pepper
- Garlic powder
- Onion powder
- Smoked paprika
- Butter
- Fresh rosemary or thyme
- Worcestershire sauce (optional)
Instructions
- Prepare the steaks: Remove the rib steaks from the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking.
- Season the steaks: Drizzle a light coating of olive oil over the steaks and rub it in. Generously season with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika on both sides.
- Preheat the grill: Set your grill to high heat (about 450-500°F). If using a charcoal grill, ensure the coals are evenly spread and at the right temperature before grilling.
- Sear the steaks: Place the steaks on the hot grill grates and sear for about 3-4 minutes per side with the lid closed. Avoid moving them too much to allow proper caramelization.
- Check for doneness: Use a meat thermometer to ensure the desired doneness:
- Rare: 120-125°F
- Medium-rare: 130-135°F
- Medium: 140-145°F
- Medium-well: 150-155°F
- Well-done: 160°F and above
- Butter baste (optional): In the last minute of cooking, place a pat of butter on each steak and add a sprig of fresh rosemary or thyme for extra flavor.
- Rest the steaks: Remove the steaks from the grill and let them rest for about 5-10 minutes. This allows the juices to redistribute, ensuring a juicy bite.
- Serve and enjoy: Slice against the grain and serve hot with your favorite sides.
Notes
- Garlic butter finish: Melt butter with minced garlic and pour it over the steak before serving.
- Spicy rub: Add cayenne pepper or crushed red pepper flakes for a heat kick.
- Herb marinade: Marinate the steaks in olive oil, rosemary, thyme, and garlic for a few hours before grilling.
- Balsamic glaze: Drizzle a balsamic reduction over the steak for a touch of sweetness.
