Ingredients
Scale
- 3 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons butter, cold and cubed
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the Grill – Set your grill to medium heat (around 375°F). If using a charcoal grill, create an indirect heat zone.
- Prepare the Blueberry Filling – In a bowl, mix blueberries with sugar, lemon juice, and cornstarch. Stir until well combined, then pour the mixture into a cast-iron skillet or a grill-safe baking dish.
- Make the Cobbler Topping – In a separate bowl, combine flour, baking powder, salt, and cinnamon if using. Cut in the butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in milk and vanilla extract to form a thick batter.
- Assemble the Cobbler – Drop spoonfuls of the cobbler batter over the blueberry filling, spreading it slightly but leaving gaps for bubbling.
- Grill the Cobbler – Place the skillet on the grill, cover, and cook for about 30-40 minutes, until the topping is golden brown and the blueberries are bubbling.
- Cool and Serve – Let the cobbler rest for a few minutes before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream.
Notes
- Mixed Berry Cobbler – Use a combination of blueberries, raspberries, and blackberries for a richer fruit flavor.
- Gluten-Free Option – Substitute all-purpose flour with a gluten-free flour blend.
- Nutty Crunch – Add chopped pecans or almonds to the topping for added texture.
- Spiced Twist – Enhance the filling with a dash of nutmeg or cardamom for extra warmth.
- Dairy-Free Version – Use plant-based milk and vegan butter for a dairy-free alternative
