Grilled Blueberry Cobbler

  • Total Time: 40-50 minutes
  • Yield: 6-8 servings 1x

Description

“Grilled Blueberry Cobbler is a smoky, sweet summer dessert made with fresh blueberries and a buttery biscuit topping. Perfect for BBQs, camping, and outdoor gatherings, this easy cobbler is cooked on the grill for a rustic, flavorful twist. Try it with vanilla ice cream!”

Ingredients

Scale
  • 3 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the Grill – Set your grill to medium heat (around 375°F). If using a charcoal grill, create an indirect heat zone.
  2. Prepare the Blueberry Filling – In a bowl, mix blueberries with sugar, lemon juice, and cornstarch. Stir until well combined, then pour the mixture into a cast-iron skillet or a grill-safe baking dish.
  3. Make the Cobbler Topping – In a separate bowl, combine flour, baking powder, salt, and cinnamon if using. Cut in the butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in milk and vanilla extract to form a thick batter.
  4. Assemble the Cobbler – Drop spoonfuls of the cobbler batter over the blueberry filling, spreading it slightly but leaving gaps for bubbling.
  5. Grill the Cobbler – Place the skillet on the grill, cover, and cook for about 30-40 minutes, until the topping is golden brown and the blueberries are bubbling.
  6. Cool and Serve – Let the cobbler rest for a few minutes before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream.

Notes

  • Mixed Berry Cobbler – Use a combination of blueberries, raspberries, and blackberries for a richer fruit flavor.
  • Gluten-Free Option – Substitute all-purpose flour with a gluten-free flour blend.
  • Nutty Crunch – Add chopped pecans or almonds to the topping for added texture.
  • Spiced Twist – Enhance the filling with a dash of nutmeg or cardamom for extra warmth.
  • Dairy-Free Version – Use plant-based milk and vegan butter for a dairy-free alternative
