These golden fluffy sourdough crumpets are airy, crispy, and have a delightful tang. A perfect way to use sourdough discard, they make a delicious homemade treat for breakfast or a snack.

- 1 cup sourdough starter (discard or active)
- 1 cup all-purpose flour
- 3/4 cup milk
- 1/4 cup water
- 1 teaspoon sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Butter or oil (for greasing the pan)
Instructions
- Prepare the batter: In a large bowl, combine the sourdough starter, flour, milk, and water. Stir until smooth and well combined. Cover and let it rest for at least 30 minutes to allow the natural fermentation to develop.
- Activate the leavening: Just before cooking, mix in the sugar, baking soda, and salt. Stir gently until the batter is fully incorporated. You will notice bubbles forming as the baking soda reacts with the sourdough.
- Heat the pan: Place a non-stick or cast-iron skillet over medium-low heat. Lightly grease it with butter or oil.
- Cook the crumpets: Grease crumpet rings (or metal cookie cutters) and place them on the skillet. Pour a small amount of batter into each ring, filling them about halfway.
- Form the bubbles: Cook for 5-7 minutes until bubbles form on the surface and the edges start to look set.
- Finish cooking: Once the top appears mostly dry, remove the rings and flip the crumpets. Cook for another 1-2 minutes to lightly brown the tops.
- Serve warm: Remove from the skillet and enjoy immediately with butter, jam, honey, or any topping of your choice.
Notes
- For a whole wheat version, substitute half of the all-purpose flour with whole wheat flour.
- To make sweet crumpets, add a teaspoon of vanilla extract and a bit more sugar.
- For a savory twist, mix in grated cheese, herbs, or finely chopped green onions.
- To make dairy-free crumpets, use plant-based milk and oil instead of dairy milk and butter.
