  • 1/2 cup milk (or dairy-free alternative)
  • 1 tablespoon lemon juice or apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and brown sugar until light and fluffy using a hand mixer or stand mixer.
  4. Add the molasses, eggs, and vanilla extract, mixing until smooth.
  5. Gradually alternate adding the dry mixture and the milk (combined with lemon juice or vinegar), stirring until just combined. Avoid overmixing.
  6. Pour the batter into the prepared baking pan and smooth out the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool completely in the pan before slicing and serving.

Notes

  • Dairy-Free Option: Use coconut oil or dairy-free butter, and replace milk with almond or oat milk.
  • Vegan Version: Substitute eggs with flax eggs (1 tbsp ground flaxseed + 3 tbsp water per egg) and use plant-based butter.
