Instructions
- Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar, then cream in the softened butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then add the lemon juice and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until no visible flour clumps remain.

- For the glaze, whisk together confectioners’ sugar and lemon juice until smooth. Drizzle over the cooled cake and garnish if desired.
