- 3 medium potatoes (Yukon gold or russet)
- 2 tbsp olive oil
- 1 cup parmesan cheese (freshly grated)
- 4 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lemon (optional for zest and juice)
- Fresh parsley (for garnish)
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C). This will ensure the chicken and potatoes cook evenly and get that perfect crispy texture.
- Prepare the Potatoes
- Wash and peel (if desired) the potatoes.
- Cut them into 1-inch cubes, ensuring they are all roughly the same size for even cooking.
- In a large bowl, toss the potato cubes with olive oil, salt, pepper, half of the grated parmesan cheese, and dried oregano. Make sure the potatoes are well coated with the seasoning.
- Prepare the Chicken
- Season the chicken breasts or thighs with olive oil, salt, pepper, dried thyme, and the remaining grated parmesan.
- If you’re using bone-in chicken, make sure to rub the seasoning under the skin for maximum flavor.
- You can also squeeze a little lemon juice over the chicken for added brightness.
- Mince the garlic and sprinkle it over the chicken.
- Assemble the Dish
- Arrange the seasoned potatoes evenly on a baking sheet, creating space for the chicken pieces.
- Place the chicken on the baking sheet next to the potatoes. This allows the juices from the chicken to flavor the potatoes as everything bakes.
- Bake the Dish
- Bake in the preheated oven for about 25-30 minutes for boneless chicken or 35-40 minutes for bone-in chicken.
- The potatoes should be golden and crispy, and the chicken should reach an internal temperature of 165°F (74°C) when checked with a meat thermometer.
- Finish and Serve
- Once everything is cooked to perfection, remove the dish from the oven.
- Garnish the chicken and potatoes with freshly chopped parsley and an extra squeeze of lemon juice, if desired.
