  • 1 cup breadcrumbs
  • 2 large yellow onions, thinly sliced
  • 2 eggs
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 slices Swiss cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined – avoid overmixing to keep the meatloaf tender.
  2. Transfer the meat mixture to a greased 9×5-inch loaf pan or shape it into a loaf on a baking sheet. If using a loaf pan, press the mixture firmly to remove any air pockets. For a free-form loaf, shape it into an oval about 2 inches thick.
  3. While the meatloaf bakes, melt butter with olive oil in a large skillet over medium heat. Add sliced onions and sugar, cooking slowly for about 25-30 minutes until deeply caramelized. Stir occasionally and add a splash of beef broth if the pan gets too dry.
  4. During the last 10 minutes of baking, remove the meatloaf from oven and top with caramelized onions. Layer Swiss cheese slices over the onions and return to oven until cheese is melted and bubbly. Let rest for 10 minutes before slicing.
